Ingredients (12 donuts):

For the batter:

  • 2 eggs
  • 100 g vegetable oil
  • 125 g coconut milk
  • 100 g erythritol
  • 160 g all-purpose flour
  • 60 g shredded coconut
  • 6 g Matcha & CO culinary matcha
  • 6 g baking powder
  • 1/4 teaspoon salt

For the glaze:

  • 100 ml coconut milk
  • 100 ml lactose-free condensed milk

Instructions

Preheat your oven to 180°C and lightly grease a donut mould to ensure easy removal later. In a mixing bowl, whisk together the eggs, vegetable oil, and coconut milk until smooth. Gradually add the erythritol and mix well. In a separate bowl, sift together the flour, shredded coconut, matcha powder, baking powder, and salt.

Gradually fold the dry mixture into the wet ingredients, stirring until a smooth batter forms. Pour the batter into the donut moulds, filling each cavity about 3/4 full.

Bake for 12–15 minutes, or until the donuts are lightly golden and spring back when touched. Allow them to cool completely before glazing.

For the glaze, mix the coconut milk and lactose-free condensed milk in a small bowl. Dip each cooled donut into the glaze and sprinkle with extra shredded coconut for a delightful finish.
