mango and chickpea thing — dead simple
Right so it's finally warm enough that I don't want anything cooked for lunch and I've been messing around trying to find something that isn't just sad desk salad energy.
This one came together last Tuesday when I had about 15 minutes before a Teams call and honestly I've made it four times since. Tinned chickpeas, one mango (ripe, proper soft), half a red onion, cucumber, loads of fresh coriander, lime juice, a tiny bit of chilli flakes if you're into that. That's basically it. Chuck it all in a bowl, squeeze the lime, done.
The chickpeas make it actually filling which is the main thing tbh — I always think a salad's gonna keep me going then I'm raiding the biscuit tin by 3pm. This one doesn't do that. I did try it with feta the other day and ngl that was a proper good shout, bit of creaminess cuts through the mango.
ingredients (serves 1, maybe 2 if you're not that hungry)
- 1 tin chickpeas, drained
- 1 ripe mango, diced
- ½ red onion, finely chopped
- ½ cucumber, chopped
- big handful fresh coriander
- juice of 1 lime
- chilli flakes optional
- feta if you've got it
Serve it with flatbread or pitta if you want it more substantial. I've just been eating it straight from the bowl while pretending to do uni work.
