cucumber and herb salad that actually keeps you full
Right so I know cucumber salads have a reputation for being basically sad diet food but hear me out. I've been making this for a few weeks now and it genuinely works as a proper lunch rather than just a side thing you push around the plate.
Basically it's cucumber, loads of fresh mint and dill from the garden, some radishes (very much in season right now, dead cheap at the farm shop), a handful of puy lentils for actual substance, and a dressing that's just Greek yogurt, lemon, a tiny bit of garlic and a good pour of rapeseed oil. My nan used to make a cold lentil thing in summer and I always thought it was a bit odd as a kid but she was completely right, cold lentils in a salad are proper satisfying. I've been adding a soft boiled egg on top too which I think finishes it off. The whole thing takes maybe 15 minutes if you've already got cooked lentils sitting in the fridge which I usually do.
