courgette fritters with whatever herbs you've got
Had two courgettes that were going a bit soft and honestly I nearly just chucked them in the caddy but thought I'd give this a go first.
Basically grate the courgettes, squeeze out as much water as you can (loads comes out, don't skip this bit), then mix with an egg, a couple of spoonfuls of plain flour, salt, and whatever fresh herbs are hanging around — I used parsley and a bit of mint which sounds odd but works. Fry in a little oil for like 3-4 mins each side til they go properly golden. That's it. I had them with some yoghurt and a squeeze of lemon for lunch and they were dead good, way better than I expected for something I basically threw together to avoid food waste. The texture's almost like a little potato cake? Mind you courgette has way less going on flavour-wise so the herbs do matter. Don't skip the squeezing step or they go soggy and sad.
