autumn stew that actually hits your macros
Made this last night and genuinely didn't expect it to be as good as it was. Basically chucked together a load of stuff I had — chicken thighs, chickpeas, sweet potato, a tin of tomatoes, some kale I needed to use up. Fried the chicken off first, added onion and garlic, then just let everything simmer for about 40 minutes with a bit of cumin and smoked paprika.
The macros on it are pure mental for how simple it is. Per bowl I'm sitting around 38g protein, decent carbs from the sweet potato and chickpeas, and it's heavy filling. I had it with a bit of crusty bread which obviously changes things but honestly after a heavy session I'm not counting every crumb. Made enough for three portions so lunches are sorted for two days which is the main thing. Genuinely one of those meals where you think you've made a mistake halfway through and then it just comes together.
