20 minute noodle thing that actually slaps

Made this on Tuesday because I got home at 7:30 and genuinely could not face cooking anything that involved more than two pans. Soba noodles, right — cook them in like 4 minutes, drain, done. While that's going: sesame oil in a pan, sliced courgette and a big handful of edamame (frozen, obviously, I'm not a farmer), couple minutes. Then just whisk together some soy sauce, a bit of rice vinegar, fresh ginger if you can be bothered grating it, tiny bit of honey, chilli flakes. Toss everything together, top with whatever seeds you've got kicking about. I had sesame and some pumpkin seeds that have been in my cupboard since approximately 2023. The whole thing was done before I'd even finished answering the last email of the day. Cold it's even better — I packed the rest in a container and had it at my desk yesterday and honestly the ROI on that one was unreal. Soba holds up properly, doesn't go all sad like normal pasta does. Mind you I did put too much rice vinegar in the first batch and nearly took the enamel off my teeth so, you know. Go steady with that.

I do something similar on long marking nights, though I usually chuck in whatever veg is about to turn in the fridge. Courgette and edamame is a good shout actually, hadn't thought to combine those.

edamame's actually decent for skin too, I eat it fairly regularly — the courgette combo sounds worth trying

do you rinse the soba after draining or just toss it straight in?
